Walk into any Lebanese home and you’ll likely find at least one jar of honey in the kitchen. But ask a beekeeper, and they’ll tell you: not all honey is the same. The flowers the bees visit, the altitude they forage at, and the season of harvest all shape the honey’s flavor, color, texture, and health properties.

At Dany’s Bees, we produce several distinct varieties, each with its own character. Here’s a guide to understanding the differences.

Thyme Honey (Asal al-Za’atar)

Color: Deep amber to dark gold Texture: Thick, viscous, slow to crystallize Season: Summer (June to August)

Thyme honey is the crown jewel of Lebanese beekeeping. Produced when bees forage on the wild thyme (za’atar) that carpets the mountain slopes above 1,000 meters, this honey has an intensity that sets it apart from every other variety.

The flavor is bold and herbaceous; you can actually taste the thyme. There are savory undertones, a slight peppery finish, and a warmth that lingers on the palate. In Lebanese tradition, thyme honey is considered the most medicinal variety, used for sore throats, coughs, and digestive issues.

Oak Honey (Asal al-Sindian)

Color: Very dark, almost black Texture: Dense, syrupy, rarely crystallizes Season: Autumn (September to November)

Oak honey is something special. Unlike flower honeys, it’s a honeydew honey, produced not from nectar but from sweet secretions that collect on oak tree leaves and bark. The bees gather these secretions and transform them in the hive.

The result is a honey unlike any other: dark as molasses, with a complex flavor profile that includes notes of dried fruit, caramel, and wood. It’s less sweet than flower honeys and has a mineral richness that makes it incredibly satisfying. Oak honey is prized for its high antioxidant content; some studies show it contains more antioxidants than any flower based honey.

Wildflower Honey (Asal al-Azhar al-Barriyya)

Color: Light to medium gold (varies by season) Texture: Medium viscosity, may crystallize over time Season: Spring to summer (March to July)

Wildflower honey is the most diverse variety we produce. Instead of a single floral source, it’s a blend created by bees foraging across hundreds of wildflower species in our mountain meadows, including clover, chamomile, hawthorn, lavender, and countless others.

The flavor is gentle and floral with a pleasant complexity. Each batch tastes slightly different depending on what was blooming that season, which is part of its charm. Wildflower honey is our most approachable variety, perfect for everyday use, whether drizzled on yogurt, stirred into tea, or spread on fresh bread.

How to Choose

There’s no wrong choice. Each variety has its place:

  • Thyme for bold flavor and medicinal use
  • Oak for depth, richness, and antioxidants
  • Wildflower for everyday enjoyment and versatility
  • Citrus for a light, bright sweetness
  • Honeycomb for the purest, most unprocessed experience
