Northern Lebanon’s highlands are home to hundreds of wildflower species, wild thyme, ancient oak forests, and citrus orchards. This diversity of flora sources means our honey contains a wide spectrum of beneficial compounds that single source honeys simply cannot match.

The altitude matters too. Bees foraging at 1,000 to 1,500 meters produce honey with different chemical profiles than those at sea level. The cooler temperatures and pristine air at altitude contribute to honey with more complex flavors and higher enzyme activity.

How to Get the Most from Raw Honey

To preserve the health benefits of raw honey, never heat it above 40°C (104°F). Add it to warm, not boiling, tea. Spread it on toast after toasting. Eat it straight from the spoon. The living enzymes and beneficial compounds in raw honey are destroyed by high heat, which is why we never pasteurize our honey at Dany’s Bees.
